Ingredients

  • 2 pounds chicken wings split at joints, tips removed
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper optional, for heat
  • ½ cup all-purpose flour for fried version only
  • 1 tablespoon baking powder for oven version only

Equipment

  • Baking sheet
  • Wire rack
  • Air fryer
  • Deep fryer or large pot
  • Mixing bowls
  • Tongs
  • Paper towels

Method

  1. Pat the chicken wings dry with paper towels to remove excess moisture. Place them in a bowl and season with oil, salt, pepper, garlic powder, onion powder, and paprika.
  2. For the oven method, preheat to 425°F (220°C). Place wings on a wire rack over a baking sheet, sprinkle with baking powder, and bake for 20 minutes. Flip them and bake for another 15 minutes until golden and crispy.
  3. For the air fryer method, preheat to 400°F (200°C). Arrange the wings in a single layer and cook for 10 minutes. Flip them and cook another 10 to 12 minutes until crisp.
  4. For the fried method, heat oil in a deep fryer or pot to 350°F (175°C). Lightly dredge the wings in flour and fry in batches for 8 to 10 minutes until golden brown. Drain on paper towels.
  5. Serve hot with your favorite dipping sauce.

Notes

For extra flavor, toss wings in buffalo, BBQ, or garlic parmesan sauce right after cooking.
